Ingredients

Scale
  • 1 lb boneless chicken thighs
  • 8 oz fresh cremini or button mushrooms
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients: Chop garlic, slice onion, and clean mushrooms.
  2. Sauté chicken: Heat olive oil in a skillet over medium heat. Season chicken thighs with salt and pepper, then cook for 5-7 minutes per side until golden brown. Remove from skillet.
  3. Cook onions and garlic: In the same skillet, add more oil if needed. Sauté onions and garlic for about 2 minutes until fragrant.
  4. Add mushrooms: Stir in sliced mushrooms and cook for an additional 5 minutes until softened.
  5. Create sauce: Pour in chicken broth and soy sauce, scraping up any brown bits from the bottom of the pan.
  6. Thicken sauce: Mix cornstarch with water to form a slurry, then add it to the skillet while stirring until thickened (about 2 minutes).
  7. Combine: Return the chicken to the skillet and let it simmer in the sauce for another 5 minutes. Serve hot.
