  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups marinara sauce
  • 2 cups shredded whole milk mozzarella cheese
  • 1 cup grated parmesan cheese
  • 2 tsp Italian seasoning
  • 2 cups rotini or penne pasta (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a large baking dish with nonstick spray.
  2. Season chicken breasts with salt, pepper, and Italian seasoning; chop into bite-sized pieces.
  3. In a skillet over medium heat, cook chicken in olive oil until browned and cooked through (about 5-7 minutes). Set aside.
  4. In a bowl, combine cooked chicken, marinara sauce, optional pasta, half of the mozzarella cheese, and half of the parmesan cheese; mix well.
  5. Transfer mixture to the prepared baking dish and top with remaining mozzarella and parmesan cheeses.
  6. Bake for 25-30 minutes until bubbly and golden brown. Let cool slightly before serving.
