  • 1 tsp cumin

  • Salt and pepper to taste
  • 4 cups vegetable broth

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic and ginger.
  2. Sauté onions in a pan over medium heat until soft (about 5 minutes), then add garlic and ginger for another minute.
  3. Transfer sautéed ingredients to the slow cooker. Add red lentils, coconut milk, curry powder, cumin, turmeric, salt, and pepper; stir well.
  4. Pour in vegetable broth to cover all ingredients by about an inch.
  5. Cover and cook on low for 6 hours or high for 3 hours.
