Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.

  3. In a mixing bowl, combine heavy cream, minced garlic, nutmeg, salt, and pepper; whisk until blended.
  4. In the prepared dish, layer half of the sweet potato slices followed by half of the kale. Pour half of the creamy mixture over the top. Repeat layering with remaining ingredients.
  5. Top with shredded cheese and cover with aluminum foil. Bake for 30 minutes; then remove foil and bake for an additional 15-20 minutes until golden brown.
