Broccoli Cheddar Soup

Broccoli Cheddar Soup is a warm, creamy delight that combines fresh broccoli and sharp cheddar cheese in a comforting blend. Perfect for chilly days, this easy-to-make soup is not only nourishing but also visually appealing with its vibrant green color.

Ingredients

Scale
  • 4 cups fresh broccoli florets (about 1 large head)
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional: pinch of nutmeg

Instructions

  1. In a large pot over medium heat, melt 2 tablespoons of butter. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another minute.
  2. Add fresh broccoli florets and pour in enough broth to cover them. Bring the mixture to a boil, then reduce heat and simmer for about 10 minutes, until broccoli is tender.
  3. Blend the soup until smooth using an immersion blender or regular blender (be cautious with hot liquids).
  4. Return the pot to low heat. Stir in heavy cream and shredded cheddar cheese until melted.
  5. Season with salt, pepper, and nutmeg if desired.
  6. Serve hot, garnished with extra cheese or croutons.
