Instructions

  1. Preheat oven to 400°F (200°C). Roast cubed butternut squash on a baking sheet drizzled with olive oil, salt, and pepper for 30-40 minutes until tender.
  2. Cook elbow macaroni according to package directions until al dente; drain and set aside.
  3. In a pot over medium heat, melt butter. Stir in flour to create a roux; cook for about two minutes. Gradually whisk in milk until smooth, then add garlic powder, salt, pepper, and shredded cheddar cheese until melted.
  4. Blend the roasted squash with the cheese sauce until smooth.
  5. Combine cooked pasta with the butternut squash cheese sauce until well coated.
