Instructions

  2. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  3. In a skillet over medium heat, brown the sausage for about 5 minutes, breaking it into smaller pieces.
  4. Add minced garlic and sauté for 1 minute. Stir in fresh spinach until wilted.
  5. Mix in the roasted butternut squash, heavy cream, and Parmesan cheese. Gradually add reserved pasta water to achieve desired creaminess.
  6. Fold in cooked pasta gently until well coated. Serve immediately with additional Parmesan on top.
