  • 1 tbsp chili powder
  • 1 cup heavy cream (or half-and-half)
  • Juice of 1 lime

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onion until translucent (about 5 minutes). Add garlic and cook for another minute.
  3. Add chicken breasts and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until chicken is cooked through.
  4. Remove chicken from pot and shred with two forks. Return shredded chicken to pot.
  5. Stir in rinsed cannellini beans, cumin, and chili powder. Simmer for another 10 minutes.
