  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey

Instructions

  1. Boil the ramen noodles according to package instructions (about 3 minutes). Drain and rinse under cold water.
  2. Chop the red bell pepper, cucumber, green onions, and grate the carrots.
  3. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey until well combined.
  4. In a large bowl, toss the cooled noodles with chopped veggies. Drizzle dressing over the top and mix well.
  5. Chill in the fridge for at least 30 minutes before serving.
