  • 4 oz sushi-grade salmon or tuna, diced
  • 2 sheets nori, cut into strips
  • ½ cup mayonnaise
  • 2 tbsp yuzu juice (or lemon juice)

  2. While the rice cools, slice cucumber, avocado, and carrot into bite-sized pieces.
  3. Dice the sushi-grade fish into cubes or strips.
  4. In a bowl, mix mayonnaise with yuzu juice and Sriracha until smooth.
  5. Assemble bowls starting with sushi rice as the base, then layer vegetables and fish on top. Drizzle generously with spicy yuzu mayo.
