  • 2 tbsp extra-virgin olive oil
  • Juice of 1 lemon

Instructions

  1. Rinse quinoa under cold water in a fine-mesh strainer. Combine with 2 cups of water in a saucepan; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until fluffy.
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Place salmon on the sheet, drizzle with olive oil, and season with salt and pepper. Bake for 12-15 minutes until flaky.
  3. While the salmon cooks, chop cherry tomatoes, cucumber, red onion, and parsley.
  4. Fluff cooked quinoa with a fork; divide among bowls. Top with salmon pieces followed by chopped veggies and crumbled feta.
  5. Squeeze fresh lemon juice over the bowls; drizzle with additional olive oil if desired. Serve warm or slightly cooled.
