  • 4 ears fresh corn on the cob
  • 1/2 cup mayonnaise
  • 2 tsp chili powder
  • 2 tbsp lime juice (freshly squeezed)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Shuck the corn, removing all husks and silk strands.
  2. Boil the corn in salted water for about 10 minutes until tender, or grill over medium heat until charred.
  3. In a bowl, combine mayonnaise, chili powder, lime juice, and half of the grated Parmesan cheese. Stir until creamy.
  4. Allow the cooked corn to cool slightly, then coat each cob generously with the sauce.
  5. Sprinkle remaining Parmesan cheese over each coated cob and garnish with fresh cilantro.
  6. Transfer to serving plates and drizzle with additional lime juice if desired. Serve warm.
