  • 2 whole wheat tortillas
  • 1/2 cup bell peppers (mixed colors), chopped
  • 1/2 cup cucumbers, diced
  • 1/2 cup shredded carrots
  • 1/2 ripe avocado, sliced
  • 1 cup romaine lettuce, chopped
  • 2 tablespoons dressing of your choice

Instructions

  1. Cook quinoa according to package instructions if not already prepared (typically 1 cup quinoa to 2 cups water).
  2. While quinoa cooks, chop the bell peppers, cucumbers, carrots, and romaine lettuce.
  3. Lay out a tortilla and spread dressing over it.

  6. Fold in the sides of the tortilla and roll tightly from the bottom up.
