  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Season salmon fillets with salt and pepper and place on a parchment-lined baking sheet. Bake for 15-20 minutes until flaky.
  2. While the salmon bakes, wash and chop the kale into bite-sized pieces. Place in a large bowl.
  3. Slice cherry tomatoes, cucumber, and red onion; add to the bowl with kale.
  4. In a separate bowl, whisk together lemon juice and olive oil; season with salt and pepper.
  5. Once cooked, cool the salmon slightly before breaking it into chunks. Toss the kale mixture with the dressing until well-coated and gently fold in the salmon.
