  • 1 medium spaghetti squash
  • 1 lb lean ground turkey
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 cup fresh basil leaves
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise, scoop out the seeds, drizzle with olive oil, and season with salt and pepper. Place cut-side down on a baking sheet lined with parchment paper.
  2. In a skillet over medium heat, add olive oil and sauté diced onions and minced garlic until fragrant (about 2 minutes). Add ground turkey and cook until browned.
  3. Stir in marinara sauce with the cooked turkey mixture and let it simmer while the squash roasts.
  4. Roast the spaghetti squash for about 30–40 minutes until fork-tender. Then flip it cut-side up.
  5. Using a fork, scrape out the flesh into noodle-like strands. Top each half with turkey marinara sauce and garnish with fresh basil.
