  • 2 tsp taco seasoning
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and stir in taco seasoning.
  3. In a large bowl, combine browned beef, black beans, and diced bell pepper.
  4. In another bowl, whisk together cornmeal, milk, egg, and salt until smooth. Pour half into the prepared baking dish.
  5. Layer the beef mixture over the cornbread base, then sprinkle with shredded cheese. Pour the remaining batter on top.
