  • 1 tsp vanilla extract
  • 3/4 cup dried cranberries
  • 3/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the oats, flour, baking soda, and salt.
  3. In a large bowl, cream the softened butter with brown and granulated sugars until light and fluffy. Add the egg and vanilla; mix well.
  4. Gradually stir the dry mixture into the wet ingredients until just combined. Gently fold in the cranberries and pistachios.
  5. Scoop tablespoon-sized dough portions onto prepared sheets, spacing them two inches apart. Bake for 10–12 minutes until golden around the edges.
