  • 2 cups fresh baby spinach
  • 1 cup chopped bell peppers (red or yellow)
  • 4 large eggs
  • 1/2 cup crumbled feta cheese
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a skillet over medium heat, add olive oil; sauté bell peppers for 3-4 minutes until soft. Add spinach and cook until wilted. Season with salt, pepper, cumin, and paprika.
  3. Remove from heat; stir in feta cheese.
  4. Fill each muffin cup halfway with the mixture. Crack an egg on top of each.
  5. Bake for 15-20 minutes until egg whites are set but yolks are still runny.
  6. Carefully remove from the tin and serve warm.
