  • 8 oz cream cheese (softened)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, ginger, and salt.
  3. In another bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vodka and lime juice.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean. Cool completely before frosting.
  6. For frosting, beat cream cheese and powdered sugar until smooth; stir in lime zest.
