  • 1/4 cup extra virgin olive oil
  • 2 tbsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh sage, chopped
  • 1 onion, quartered
  • 1 bulb garlic, halved

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove giblets from the turkey and rinse it under cold water. Pat dry with paper towels.
  3. Rub olive oil over the turkey and season generously with salt and pepper, both inside and out.
  4. Stuff the cavity with fresh herbs, quartered onion, and garlic.
  5. Place the turkey breast-side up in a roasting pan. Tent loosely with foil.
  6. Roast for approximately 13-15 minutes per pound until the internal temperature reaches 165°F (74°C).
  7. Baste every hour with its juices for added moisture.
