  • 2 cups cauliflower florets
  • 2 tbsp taco seasoning (store-bought or homemade)
  • 8 small corn or flour tortillas
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cauliflower florets with olive oil and half of the taco seasoning. Spread on the baking sheet and roast for 20 minutes until golden brown.
  3. In a skillet over medium heat, cook ground beef until browned. Drain excess fat and stir in remaining taco seasoning with a splash of water.
  4. Combine roasted cauliflower and seasoned beef in a large bowl.
  5. Warm tortillas in a dry skillet for about one minute on each side.
  6. Assemble tacos by spooning the cauliflower-beef mixture onto each tortilla, topping with cilantro and lime juice.
