  • 1 lb ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 14 oz canned diced tomatoes (fire-roasted preferred)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt & pepper to taste
  • 2 tsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the diced onion and minced garlic until fragrant (about 5 minutes).
  2. Add ground turkey, breaking it apart with a spoon until browned (approximately 7 minutes).
  3. Stir in the diced bell peppers and cook for about five more minutes.
  4. Sprinkle in chili powder and cumin; mix well.
  5. Add canned tomatoes (with juice) and kidney beans. Bring to a simmer and cook for 20 minutes.
  6. Taste and adjust seasoning if necessary before serving.
