  • 2 pounds russet potatoes
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 6 strips crispy bacon, chopped
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Peel and chop the russet potatoes into even chunks. Boil in salted water until fork-tender (about 15-20 minutes). Drain.

  4. Stir in half of the cheddar cheese and half of the bacon bits.
