Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, mix eggs, vegetable oil, pumpkin puree, and vanilla until smooth.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Beat cream cheese with powdered sugar and vanilla until smooth.
  6. Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture on top, then cover with remaining batter. Swirl gently with a toothpick.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
