  • 3 large eggs

Instructions

  1. In a large mixing bowl, combine raisins, currants, sultanas, and mixed spices. Soak in stout or ale for at least one hour.
  2. Stir in fresh breadcrumbs, dark brown sugar, and treacle until well combined.
  3. Add eggs and mix until smooth; the batter should be thick but pourable.
  4. Transfer to a greased pudding basin and cover tightly with parchment paper and foil.
  5. Place the basin on a trivet in a pot filled with boiling water. Cover and steam for about six hours.
  6. Allow the pudding to cool completely before wrapping tightly for storage.
  7. Re-steam for two hours before serving warm with custard or cream.
