Instructions

  1. In a bowl, mix flour, baking powder, sugar, and salt. In another bowl, beat eggs and combine with milk and melted butter. Gently mix wet ingredients into dry until just combined.
  2. Preheat the waffle iron.
  3. In a saucepan over medium heat, combine apples, brown sugar, cinnamon, nutmeg, lemon juice, and a tablespoon of water. Cook until apples are tender but still firm.
  4. Pour batter onto the preheated waffle iron and cook until golden brown (about 3–5 minutes).
  5. Serve waffles topped with spiced apple compote while warm.
