Butternut Squash and Whipped Feta Dip is a creamy and flavorful appetizer that perfectly balances the natural sweetness of roasted butternut squash with tangy whipped feta cheese.

  • 2 cups diced butternut squash
  • 1 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Spread the diced butternut squash on the baking sheet, drizzle with 2 tablespoons of olive oil, season with salt and pepper, and toss to coat. Roast for 25-30 minutes until tender and slightly caramelized.
  3. While roasting, mince the garlic.
  4. Once the squash has cooled slightly, add it to a food processor with crumbled feta cheese, minced garlic, lemon juice, and the remaining tablespoon of olive oil. Blend until smooth and creamy.
  5. Taste the dip; adjust seasoning as needed before serving.
