  • 1/2 cup crushed candy canes

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and peppermint extract until combined.
  4. In another bowl, whisk together flour and baking soda; gradually add to wet mixture until just incorporated.
  5. Fold in half of the crushed candy canes. Scoop tablespoon-sized balls onto prepared sheets and sprinkle remaining candy canes on top.
  6. Bake for 10-12 minutes until edges are lightly golden. Cool on racks before serving.
