Instructions

  3. In another bowl, beat eggs, vegetable oil, and vanilla extract until frothy. Stir in grated carrots.
  4. Gradually mix wet ingredients into dry ingredients until just combined. Fold in nuts if using.
  5. Pour batter into the prepared pan and smooth the top. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow to cool before cutting into squares.
