Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg yolk and vanilla extract, mixing well.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually incorporate this mixture into the wet ingredients until just combined.
  4. Roll tablespoon-sized portions of dough into balls and place them on the baking sheets about two inches apart. Make an indentation in each ball using your thumb.
  5. Bake for 12-15 minutes or until slightly golden around the edges. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  6. For the ganache, heat heavy cream in a saucepan until simmering. Pour it over dark chocolate chips in a bowl; let it sit for two minutes before stirring until smooth.
  7. Once cookies are cool, fill each thumbprint with ganache.
