  • 9 no-boil lasagna noodles
  • 4 cups baby spinach
  • 1 cup vegan ricotta cheese
  • 3 cups marinara sauce
  • 1/4 cup nutritional yeast
  • 1 cup sliced mushrooms
  • 1 medium zucchini, thinly sliced
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil and sauté the mushrooms and zucchini until tender (about 5 minutes). Set aside.
  3. In a large bowl, combine the spinach, vegan ricotta, and nutritional yeast until mixed well.
  4. Spread a thin layer of marinara sauce on the bottom of the baking dish. Layer three lasagna noodles on top, followed by half of the spinach mixture and half of the sautéed veggies. Repeat the layering process once more, finishing with marinara sauce on top.
  5. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 15 minutes until golden brown.
  6. Allow to cool for 10 minutes before slicing and serving.
