  • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil the pasta shells in salted water until al dente (about 8 minutes). Drain and set aside.
  3. In a bowl, mix ricotta, half of the mozzarella, Parmesan, spinach, garlic, salt, and pepper until well combined.
  4. Stuff each shell with about 2 tablespoons of filling and place seam-side up in a baking dish coated with marinara sauce.
  5. Cover stuffed shells with remaining marinara sauce and sprinkle with the rest of the mozzarella.
  6. Bake for 25-30 minutes until bubbly and golden brown. Let cool slightly before serving.
