  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 2 cups dry red wine
  • 4 oz bacon lardons
  • 8 oz fresh mushrooms, sliced
  • 2 shallots, chopped
  • 4 garlic cloves, minced
  • 2 tsp fresh thyme
  • 1 cup low-sodium chicken broth
  • 2 tbsp flour

Instructions

  1. Prepare ingredients: chop bacon, slice mushrooms and shallots.
  2. In a Dutch oven over medium heat, cook bacon until crispy; set aside.
  3. Sear chicken thighs skin-side down until golden brown on both sides; remove from pot.
  4. Sauté shallots and garlic in the same pot until fragrant; sprinkle flour over mixture.
  5. Pour in red wine and chicken broth; scrape up any brown bits from the pot.
  6. Add back bacon, mushrooms, thyme, and seared chicken; bring to a simmer.
  7. Cover and simmer for about an hour until chicken is tender.
