  • 4 dried guajillo chiles
  • 3 dried ancho chiles
  • 1 large onion, chopped

  • 4 cups low-sodium beef broth
  • Small corn tortillas (for serving)

Instructions

  1. Remove stems and seeds from chiles; soak in hot water for 15 minutes.
  2. Blend soaked chiles with garlic, onion, cumin, oregano, and 1 cup of beef broth until smooth.
  3. Trim excess fat from the chuck roast and cut into chunks; season with salt and pepper.
  4. Place meat in the crockpot; pour the blended sauce and remaining beef broth over it.
  5. Cook on low for 8 hours or high for 4-5 hours until meat is fork-tender.
  6. Shred the beef in the crockpot or transfer to a bowl first. Serve in warm tortillas topped with cilantro, diced onions, lime wedges, and a side of consomé.
