  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp extra virgin olive oil (divided)
  • 4 garlic cloves, minced
  • ½ cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss halved Brussels sprouts in 1 tbsp olive oil, salt, and pepper. Spread on the baking sheet and roast for 20-25 minutes until golden brown.
  3. In another bowl, mix panko breadcrumbs with remaining olive oil and minced garlic. Spread on a separate baking sheet and bake for 5-7 minutes until golden.
  4. Whisk together lemon juice, Dijon mustard, grated Parmesan, salt, and pepper in a bowl. Gradually add remaining olive oil until creamy.
  5. Once Brussels sprouts are roasted and cooled slightly, toss them with the dressing. Top with crispy breadcrumbs and additional Parmesan if desired.
