  • 1 cup heavy cream (or half-and-half)

  • Salt and pepper to taste
  • 1 teaspoon fresh thyme (or dried)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, melt the butter. Add the sliced onions and sprinkle with salt; sauté for 15-20 minutes until caramelized.
  3. Layer the sliced potatoes in the greased dish, followed by half of the caramelized onions, thyme, salt, pepper, and half of the cheese. Repeat layers.
  4. Whisk together heavy cream with additional salt and pepper; pour evenly over the layers. Top with remaining cheese.
  5. Cover with aluminum foil and bake for 1 hour. Remove foil and bake for an additional 30 minutes until golden brown.
