  • 4 medium russet potatoes (about 2 lbs), peeled and cubed
  • 2 large sweet onions (such as Vidalia), thinly sliced
  • 1 cup panko breadcrumbs
  • 1 ½ cups shredded Gruyère cheese
  • 4 tbsp unsalted butter, divided
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and coat a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Add sliced onions and sauté until caramelized, about 15 minutes.
  3. In a bowl, toss cubed potatoes with olive oil, salt, and pepper.
  4. Combine the caramelized onions with the seasoned potatoes in the bowl.
  5. Transfer the mixture to the prepared baking dish. Layer with half of the cheese, then top with remaining cheese and panko breadcrumbs mixed with remaining butter cut into small pieces.
  6. Bake for 30-40 minutes until golden brown and bubbly.
