  • 4 cups fresh Hatch chiles (about 12 medium)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced

Instructions

  1. Preheat oven to 450°F (230°C). Place Hatch chiles on a parchment-lined baking sheet and roast for about 15 minutes until skins are blistered.
  2. Transfer roasted chiles to a bowl and cover with plastic wrap for 10 minutes to steam. Peel off the skins.
  3. In a skillet, heat olive oil over medium heat. Sauté chopped onions until translucent (about 5 minutes), then add minced garlic for another minute.
  4. Chop peeled chiles and add them to the skillet, stirring well. Cook together for an additional 5-7 minutes.
  5. Transfer mixture to an oven-safe dish, sprinkle cheese on top, and broil for 3-5 minutes until bubbly.
