  • 4 garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 tbsp tomato paste
  • 1 (28 oz) can diced tomatoes
  • 1 cup dry red wine
  • 1 cup low-sodium beef broth
  • 1 tbsp balsamic vinegar
  • 12 oz pappardelle pasta

Instructions

  1. Set the Instant Pot to 'Sauté' and heat olive oil. Season short ribs with salt and pepper, searing each side for about 3 minutes until browned. Remove and set aside.
  2. In the same pot, add onions, garlic, and carrots; sauté for about 5 minutes until softened.
  3. Deglaze with red wine, scraping up brown bits from the bottom. Let reduce for about 2 minutes.
  4. Stir in tomato paste, diced tomatoes, beef broth, and balsamic vinegar until combined.
  5. Return short ribs to the pot. Close the lid and cook on 'Manual' high pressure for 60 minutes.
  6. Release pressure carefully; shred short ribs using two forks and return to sauce.
  7. Cook pappardelle according to package instructions until al dente (about 6 minutes). Drain and toss with ragu.
