Instructions

  1. Rinse the lentils under cold water, then boil in three cups of water for 25-30 minutes until tender.

  3. In a mixing bowl, combine cooked lentils (drained), veggies, breadcrumbs, eggs, salt, pepper, and optional spices.

  5. Fill each muffin cup with the mixture generously.
