Instructions

  1. In a mixing bowl, combine warm water, yeast, and brown sugar. Let sit for 5 minutes until frothy.
  2. Gradually mix in flour and salt until a shaggy dough forms. Knead for about 7 minutes on a floured surface until smooth.
  3. Place the dough in an oiled bowl, cover it, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. Punch down the dough and divide it into equal pieces. Roll each piece into long ropes and twist them into pretzel shapes.
  5. Boil water with baking soda in a large pot. Drop each pretzel into the boiling water for 30 seconds before transferring to parchment-lined baking sheets.
  6. Preheat the oven to 450°F. Brush pretzels with egg wash (optional) and sprinkle with coarse salt. Bake for about 12 minutes or until golden brown.
