  • 1 (8.5 oz) box Jiffy corn muffin mix
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1 cup shredded cheddar cheese (divided)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with nonstick spray.
  2. In a large bowl, combine sweet corn, Jiffy cornbread mix, sour cream, melted butter, and half of the shredded cheese until well mixed.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Bake for 45 minutes or until golden brown on top and set in the center.
  5. In the last five minutes of baking, sprinkle the remaining cheese on top and let it melt.
  6. Allow to cool for five minutes before serving.
