  • 16 oz cream cheese, softened
  • 1 cup granulated sugar

  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed. Press this mixture firmly into the bottom of a greased baking dish to form the crust.
  2. In another bowl, beat softened cream cheese until smooth. Add granulated sugar and mix until combined. Stir in pumpkin puree and pumpkin pie spice until blended.
  3. Add eggs one at a time, beating well after each addition until smooth.
  4. Pour the cheesecake filling over the prepared crust and bake for 30-35 minutes until set but slightly jiggly in the center.
  5. Let cool at room temperature before refrigerating for at least two hours. Cut into bars and serve chilled or at room temperature.
