  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • ¼ cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix pumpkin puree, brown sugar, eggs, and melted butter until smooth.
  4. Gently fold the wet ingredients into the dry mixture until just combined.
  5. For the streusel topping, combine oats, granulated sugar, brown sugar, flour, and cold butter in a small bowl; mix until crumbly.
  6. Divide batter into muffin tin, filling each about three-quarters full. Top with streusel mixture.
  7. Bake for 20–25 minutes or until golden brown and a toothpick comes out clean. Allow to cool slightly before serving.
