Ingredients

Scale
  • 1 lb mixed game meat (venison, rabbit, pheasant)
  • 1 cup puff pastry (store-bought or homemade)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tsp fresh thyme (chopped)
  • 2 tsp fresh rosemary (chopped)
  • 1 cup low-sodium beef stock
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a deep baking dish.
  2. In a skillet over medium heat, add oil and sauté the onion until translucent. Add minced garlic and cook until fragrant.
  3. Add the mixed game meat along with thyme and rosemary. Brown the meat for about five minutes, then pour in the beef stock. Simmer for approximately 20 minutes until tender.
  4. Roll out the puff pastry on a floured surface to about an eighth of an inch thick. Cut out two circles: one for the bottom crust and one for the top.
  5. Layer half of the filling in the baking dish, cover with half of the pastry circle. Repeat with remaining filling and top with another pastry layer, sealing edges by pinching.
  6. Brush the top with egg wash and cut slits for steam to escape. Bake for 45-50 minutes until golden brown.
