Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 2 teaspoons active dry yeast
  • 1 cup warm milk (110°F)
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1/2 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Prepare the dough: In a large bowl, combine warm milk and yeast; let sit for five minutes. In another bowl, mix flour, cocoa powder, and sugar. Add yeast mixture, melted butter, eggs, vanilla extract, and red food coloring to dry ingredients. Stir until combined.
  2. Knead: Turn the dough onto a floured surface and knead for about five minutes until smooth.
  3. Rise: Place dough in an oiled bowl, cover it with a towel, and let it rise in a warm area until doubled in size (about one hour).
  4. Fill: Roll out the dough into a rectangle about 1/4 inch thick. Mix brown sugar and cinnamon; sprinkle over dough before rolling tightly from one end.
  5. Slice & second rise: Cut into twelve slices using dental floss or a sharp knife; place in a greased baking dish for another thirty minutes to rise.
  6. Bake & frost: Preheat oven to 375°F (190°C). Bake rolls for about twenty-five minutes until golden brown. While cooling, beat cream cheese with powdered sugar until smooth; drizzle over warm rolls.
