- 1 head of garlic
- 1/4 cup tahini
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast until tender, about 45-60 minutes.
- For the garlic, chop off the top of the head, drizzle with olive oil, wrap in foil, and add to the baking sheet for the last 30 minutes of roasting.
