  • 2 medium beets (about 300g)
  • 1 head of garlic
  • 1/4 cup tahini
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast until tender, about 45-60 minutes.
  2. For the garlic, chop off the top of the head, drizzle with olive oil, wrap in foil, and add to the baking sheet for the last 30 minutes of roasting.
  3. Once roasted, let everything cool before peeling the skins off the beets.
  4. In a food processor, combine peeled beets, roasted garlic cloves, tahini, lemon juice, olive oil, and salt. Blend until smooth.
  5. Adjust seasoning to taste before serving.
