  • 8 ounces fresh mozzarella cheese, sliced

  • Fresh basil leaves, for garnish
  • Salt and pepper to taste

Instructions

  1. Slice eggplants into half-inch thick rounds, sprinkle with salt, and let sit on paper towels for 30 minutes to draw out moisture.
  2. Rinse off the salt and pat the slices dry. Heat olive oil in a skillet over medium heat and sauté eggplants in batches until golden brown on both sides, approximately 4 minutes per side.
  3. In an oven-safe baking dish, layer marinara sauce, half of the sautéed eggplants, half of the mozzarella, then repeat.
  4. Top with grated Parmesan cheese and additional cracked pepper if desired.
  5. Preheat oven to 375°F (190°C). Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until bubbly and golden.
  6. Let cool slightly before serving and garnish with fresh basil leaves.
