Instructions

  1. In a bowl, whisk together flour and salt. In another bowl, combine eggs and milk until smooth. Gradually mix wet ingredients into dry ingredients while whisking until smooth. Stir in melted butter and let rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease with butter. Pour in about half a cup of batter and swirl to cover the bottom evenly. Cook until edges lift (about 2 minutes), flip, and cook until golden brown (about another minute). Repeat with remaining batter.
  3. In another skillet over medium heat, add olive oil. Sauté zucchini and bell peppers until tender (about 5 minutes), then add spinach until wilted. Season with salt and pepper.
  4. Assemble each crepe by placing it on a plate, filling it with sautéed veggies, and sprinkling feta cheese before folding it over.
  5. Serve immediately, drizzled with any leftover sauté juices or melted butter.
