  • 2 tsp fresh thyme (or 1 tsp dried thyme)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish with nonstick spray.
  2. In a bowl, whisk together eggs and milk; season with salt and pepper.
  3. Sauté chopped onions and bell peppers in a pan over medium heat for about five minutes. Add spinach and thyme until spinach wilts.
  4. Layer half of the torn bread in the baking dish, followed by half of the sautéed vegetables and half of the cheese. Repeat the layers.
  5. Pour the egg mixture over the top, pressing down gently to ensure bread absorbs the liquid.
  6. Bake for 45-50 minutes until golden brown on top. Let cool slightly before serving.
